Roasted Hazelnut Truffles

Fudgy, chocolatey truffles rolled in crunchy roasted hazelnuts and sneakily delivering all kinds of fruit n nut goodness. Try them. Prepare to be hooked.

Soak 200g dates in warm water for an hour or so and then drain.

Throw 100g hazelnuts (on a baking tray) into a hot oven for ten minutes or so – check they don’t burn. Let them cool before rubbing off the charred skins and blitzing in a food processor ’til they resemble breadcrumbs.

Spoon out a couple of tablespoons of the nuts into a bowl before adding the dates, 75g cashews, 75g raisins and 50g cocoa or cacao to your food processor. Blend until all the mixture clumps together into a ball.

Pinch out small balls of the mixture and then roll each in the reserved hazelnut mixture. When they’re all done pop them in the fridge for an hour or so.

They taste kinda decadent so I’d recommend that you are semi-reclined on silken cushions to get the full experience. Satin nightgowns and fluffy mules optional.

    • Fantastic! Make sure you keep some for you too. It’s important to sample! I’m thinking you could probably soak the dates in Christmassy booze of some description, just to make them last longer you understand!
